1)For the world-building there is CentrED for building and decorations and "land building",y
You can also use mapGenerator for building the map from scratch.
Take in count that is very expensive in terms of time to create a nice world!

2)For the client i suggest to stick to the 2d client.

3)Yes

4)Yes, u can create your custom crafting / gathering system.

5)Yes i think, example: create a multi of n*n size, that contains no tiles but just a sign with the land owner name.
